Vegan fruit Buns Recipe: Easy and Delicious

Super easy and delicious but time consuming. It is easy recipe to veganize so most of polish vegans knows how to do it instantly.

Ingredients

Starter:
– ½ cup warm soy or oat milk
– 50 g fresh yeast
– 1 tablespoon sugar
– 1 tablespoon all-purpose or light spelt flour
Dough:
– 3 cups all-purpose or light spelt flour
– 3 tablespoons sugar
– ½ cup warm soy or oat milk
– 3 tablespoons sunflower or rapeseed oil
– a pinch of turmeric
Crust:
– 200 g all-purpose or light spelt flour
– 100 g vegan margarine
– 50 g powdered sugar
Fruits:
– 2 cups of cherries
-2 teaspoons of sugar

1′ step: start from the starter

In a bowl, combine the milk, yeast, flour, and sugar. Cover and set aside in a warm place for 15 minutes.

2′ step: Dough

Add flour, milk, sugar, turmeric, and oil to the starter. Knead the dough for at least 10 minutes. It should be soft, elastic, and not sticky.

3′ step: let the dough rest!


Cover the bowl and set aside in a warm place for about an hour.

After an hour when the dough risen. Dust the work surface with flour. Gently stretch the dough with your fingers until it is about ½ cm thick. Cut out circles about 8-10 cm in diameter. Place them on a baking sheet lined with baking paper, spaced apart.

Here i have curcuma, chili flakes, pepper and black salt

4′ step: Crust topping and fruits


Using a food processor or your fingers, rub the margarine, sugar, and flour together to form a crumble. As i used cherries from my garden i had to drill them (what a mess) and added sugar to it. I mixed it all together and left it for few min so the juices can leak out. (other wise it would leak on the buns whiles baking – not an issue for me to be honest but if you want a clean look you can leave it for few min)

5′ step: building the buns

Press the fruit into the dough circles and sprinkle with the crumble topping. Fruit-free cake, can be brushed with milk – bake for about 20 minutes at 180°C. Top/bottom heat, middle rack. Let cool and serve with cold plant-based milk
