Easy | 10 min | 1 fancy vegan ingredients (black salt Kalanamak)
If you miss scrambled eggs like me, tofu scramble is for you! (eggs were last thing that i left go). So this is something that i do almost every morning. An easy vegan breakfast made with just 5 main ingredients in 10 minutes.
Ingredients
- half pack of tofu
- splash or two of plant milk (depending on firmness of your tofu)
- 1 tbs of black salt (Kalanamak)
- turmeric (for colour)
- 2 tablespoons of oil
If you feel fancy, you can add
(i mostly do):
- Parsley
- 1/3 Onion
- few sizzled mushrooms
- pinch or two of pepper or chili flakes
1′ step: chop your onion!
Chop your onion as you like, i use thin slices. In the same time heat the pan. Drizzle some oil, hit it up to medium heat. When the pan is ready add onion (if you decide to use anything else like mushrooms add it to).
2′ step: crush that tofu!
Add tofu to a bowl and mush it with fork. You can do it with any tofu you have. I did it with smoked one few times before, it is really nice has this smokiness coming through. Firm tofu will need some milk, but you can also use soft tofu. With soft tofu you do not need to add any milk! Add all your spices and mix it all together. Main spice is black salt Kalanamak that will give us this eggy taste.

3′ step: Add your mixture to the pan!
After you add tofu to the pan, reaction with the hit will activate the turmeric and your tofu will start to turn yellow. When whole mixture get this colour it means it is ready. I love this visual tip from “mother nature”, you do not need timer at all, but it should take 3-4 min. Steer it all the time.

4′ step:Serve!
I usually eat it with Coleslaw or some other salad here i got avocado(first this year) sprinkle some chopped parsley as i felt fancy!
