Ingredients:
For the sauce:
- 2 tbsp plain flour
- 200 ml oat milk
- 400 g butter beans
- 3 tbsp of vegan butter
- Large handful of vegan cheese
- Large handful of inactive east
vegan bacon
half of tofu/ tempeh cube
tablespoon of smoked paprika
100 ml of tomato paste
tablespoon of soy sauce
2 tablespoons of maple syrup
1 tablespoon of olive oil
water
1’Step: Go check vegan bacon recipe
Vegan bacon recipe is quite quick but it takes 24 h marinate time!!! So please check it before moving forward. You can obviously replace it with shop bought alternative but, here is my recipe.

Step 2: Prepare pasta
For carbonara if you want to be holy and Italian you should use spaghetti pasta. I unfortunately do not have it at home at this moment so I used penne. I really hope I won’t offend any Italians.
3’step: Sauce
Now in a saucepan, melt your butter then combine with the flour. Slowly add milk while mixing. When the sauce is taking shape, quickly blend your beans with more milk. This makes them creamy and more runny, so they mix well with the sauce. Mix it all together in the pan. After adding butter beans add cheese and inactive east and mix it all together once again. Add some spices and add pepper.

4’step: Mix it all together
Grab a plate. Add pasta and sauce. Sprinkle it with vegan bacon. In this recipe, I used scallions. I apologize to Italians who come across this recipe, but it works and tastes great.
