Ingredients:
150 g smoked tofu
1 tbsp of sesame/olive oil
1 tbsp of soy sauce
1 fistful of shredded nori / or half of sheet of nori
1 pinch of pepper
Equipment
blender or fork
Vegan fish spread or “wegańska pasta rybna” in Polish. I am not sure if this is something that other countries recognize. However, in Polish vegan culture, I would say it is a staple dish. I would even dare to throw a “traditional” in there. It mimics the flavor and texture of traditional fish paste, offering a vegan alternative. It is simple, filling and quick to make.
1’ Step: take out blender
You can crunch your tofu and throw it into a blender, add oil, soy sauce and nori. I used shaded as I have those on hand. It makes no difference if you use a more popular sheet of nori, same as used for sushi. You can tear it a bit before adding it to the blender so it spreads evenly.
2’ Step: Blend it
Blend everything together for a minute or two. If you need to add some more liquid I sometimes add water. If you do not have a blender you can use a fork and just squish it for 5-10 min. It won’t be so quick but it will still be tasty.
3’ Step: Spread it
When paste is done, spread it on toasted bread. I sprinkle it with dill and add pickled gherkins as a garnish. It gives it good balance. I sometimes use it for dumpling filling as well. It works super nice. I have a great recipe for dumplings from my grandma that I will share someday maybe after summer. Dumplings are more of a cold weather food.
