10 min | 8 h marinating | Easy | 6 Ingredients
Ingredients:
2 carrots
3 tsp capers
100 ml of soy sauce
½ lemon
⅓ of cup of nori shreds (or full sheet of nori )
1 tbsp smoked paprika

You need to marinate the "salmon" for few hours, i do it over night!!
This recipe is a lazy version of fancy smoked salmon (carrot). You can find many recipes all over the internet. All of them are fancy and lovely. This is just my lazy quick twisted version.
1’ Step: Carrots
Wash carrots and take the peeler out.
Try to peel the whole carrot. Towards the end, when the carrot is getting thin, you can put it down and press it with a peeler to the board. It will help to not waste any carrots.

2’ Step: Boil the carrots
Add water to the pot and boil it. When water starts bubbling add your carrots for 1-2 min. We just want it to soften but not to fall apart. This works for me the best as it is the quickest and easiest.
3’ Step: prep the sauce
Get a bowl or some type of lunch box so you can seal it after. Add soy sauce, lemon, nori, smoked paprika and capers. Add some water so you can cover carrots with the mixture later. Quickly steer it.

4’ Step: marinate
Strain carrots and add it to the mixture. Leave it in a fridge overnight. In the morning you have a lovely smoked vegan salmon. You can pair it you can enjoy with vegan spread and on toast.
