Vegan Tempeh and Potato: 8 Ingredients, Delicious Meal

Ingredients:

100g tempeh
1 potato
2 sprigs of dill

Sauce:

  • 1 tbsp of mustard
  • 2 tbsp of mayo(vegan)
  • 1 tbsp apple vinegar
  • 1 tsp of clone syrup

Spices:

  • pepper

Tempeh is a fermented soybeans, originating in Indonesia, known for its high protein content and unique, nutty flavor. It is a popular plant-based protein source. People often use it as a meat substitute due to its firm texture. It can absorb flavors from sauces and seasonings effectively. Before going vegan i never heard about tempeh. But it was a while back, and I am not very sophisticated cook, as you probably can see already. Either way if you know all of that, you can skip to steps 😉

1’Step: Tempeh

I chopped the tempeh into fine slices. When the pan reaches medium heat. For me, it is 6 out of 9 degrees. I add oil and then add tempeh. Fry it on one side till golden. BTW:I have a new pan and I am just obsessed, totally recommending Iron cast! I have used it a few times already and I am sold. If something changes I will let you know. After around 4 min tempeh gets golden so I flip it to the other side. When tempeh is still frying, get your potato out!

2’Step: Potato

I rinsed it and did not peel it. Let’s say I am going for rustic vibes, do not think I am lazy. So potato need chopping into slices too. As the tempeh is done, remove it from the pan. Add your potato and spread it evenly. Ensure every slice gets its own little space at the bottom. I reduced the heat now to 5 (but this is because of this pan, didn’t I mention i just love it right? BTW: i do love it.) For other, less majestic pans the heat could still be a bit higher. I also added 1 tbsp of Olive oil and I used a lid for this one so it cooks quicker. After 7-10 min flip it on the other side and wait for another 5-7 min (again depend on the pan you use – mine is superior so it takes less, bet we all knew that right)

3’Step: Make some sauce

This is a simple one. Add all condiments to a small cup. Use 1 tbsp of mustard, 2 tbsp of mayo (vegan), 1 tbsp of apple vinegar, and 1 tsp of clone syrup. Mix them for a few seconds.

4’Step: Chop dill and plate

Chop the dill into little pieces, add everything to a bowl and sprinkle pepper on top. Instead of dill you can use parsley or spring onions as well and Voila!
