45 min making but most is waiting for potatoes
Ingredients:
main Star
3 Potatoes
1 tbsp of olive oil
pinch of salt and pepper
Dressing
- 3 tsp vegan mayo
- ½ tsp mustard
- 3 tbsp apple vinegar
- 2 tsp of clone syrop
- 2 pinches of pepper
- 1 pinch of chili flakes
Veggies mix:
- 1 cucumber
- 2 sprigs of dill
- 4 spring onions
- ⅓ red onion

1’Step: Boil potatoes
Prep your potatoes, wash them, and try to leave skin as it will add crunch to a dish. After washing potatoes, cut them in smaller pieces, not too small though maybe into 3 or 4 pieces each. Boil water in a pot. Add a pinch of salt and pepper. Boil for 15 min and after drain. As potatoes are cut into smaller pieces boiling time can be cut. Check whenever potatoes are ready with a fork, if they are splitting nicely then we are done here.
2’Step: OVEN
Add your boiled potatoes to the oven tray with baking paper on it. After nicely spreading potatoes on a tray, put another sheet of baking paper and press potatoes with the bottom of a glass. Take the top layer of the paper out and drizzle some olive oil, add pepper and salt and put it into the oven for 20 min. I set the temperature to 200°C and set the oven to a convection setting.

While potatoes are in the oven, take care of your dressing.
3’Step: DRESSING

Chop all your veggies into small pieces. Onion, cucumber, dill and spring onions. Get the dressing rolling. Add 3 tsp vegan mayo, ½ tsp mustard, 3 tbsp apple vinegar, 2 tsp of clone syrup, 2 pinches of pepper, 1 pinch of chili flakes to a bowl and mix till you get a smooth texture. After you feel the mixture is done, mix it with all the veggies.

4’Step: mix it up
When potatoes are done you can leave them to cool for 5min. After pouring your dressing on top of it, eat 😉 For me, those are the best potatoes I’ve ever made! I hope you will enjoy it as much as I did!!
