Rice and tofu quiche With Veggies

Easy | 40 min | minimum 4 ingredients but 2 are fancy  
(black salt Kala namak, inactive yeast flakes)

Today I made a vegan quiche from leftover rice as a base! I probably need to explain myself here! I am not a massive fan of rice and ppl who know me know this, i eat rice when it has some kind of shape…other than just a pile. I like sushi, and onigirazu, etc… and all that…but not in it’s original form which is no form. I know there is not logic, but it is something that I am “struggling” with. Either way my boyfriend 🤦‍♂️ went away and left some rice behind him in our fridge…🤌. As I was thinking about quiche for some time but first we had a weekend and I was eating out, living my best vegan life, then grim Monday came, so Tuesday – is the day!

Ingredients

must have:
1/2 block of tofu
rice half of cup cooked rice
1/4tbs black salt Kala namak
2,5 tbs inactive yeast flakes

some veggies of your choice today i used:
5 broccoli florets
4 dried tomatos
2 garlic

If you feel fancy, you can add
(i mostly do):
pinch of turmeric/kurkuma
(for colour),pepper and chili flakes

1′ step: Prep rice base

If you haven’t got cooked rice, you go and cook one. As mentioned before, I am not a massive fan of it, so i have no clue how to cook it…like i know as i can read the packet, but you know…i do not care. I just need to eat this one that I have at home, so I do not feel bad when I throw it away. So get you cooked rice and mush it nicely in your dish to make a quiche base like form. Set your oven to 200°C so it warms up, shove your base for 10 min.

2′ Step: BLEND SOME TOFU

I use soft tofu here as I had this one at home but if you have firm one you will just need to add a bit of moisture like plant based milk. I did this several times and it worked really well too. So add your tofu to a blender with black salt, inactive yeast flakes, kurkuma, pepper and chili flakes. Blend it for a minute or two.

3’Step: Chop your veggies

I had sundried tomatoes at home (I know I am fancy like that sometimes) garlic and broccoli. Chop everything into small pisces.

4’step: put everything together

Take your base from the oven, put some tofu sauce at the bottom, add a bit of veggies, again add sauce, again veggies and sauce at the end.

5’Step: Bake it

Your oven should be heated because we already baked the base, so leave it at 200℃  for the first 10 min and after you can set it to lower temperature for the rest of time.

6’step: SERVING

As I am not a person who can wait , I normally eat seconds after I get it out of the oven. It might cause burns but no waiting time required (at your own risk) but best to wait a few min before you start.
