EASY BAKED CABBAGE & KALE WITH LEMON SAUCE

Easy | 25 min | no fancy ingredients

Baked purple/green cabbage, kale, and fresh parsley, drizzled with a creamy lemon sauce.

Ingredients

Sauces
2 cloves of garlic
parsley
lemon 2 slices
200 ml milk
3 tablespoons of oil
1 tablespoons of mustard
pepper

Veggies to bake
1/4 cabbage
1/4 bag of kale

Extras to consider ( optional ingredients)
one bond of soba noodle
1/2 tofu block
pumpkin seeds
salt
pepper
chili flakes

Equipment
Blender, Oven, Pan

1. SET UP AN OVEN

Set your oven to 200°C so it warms up while you prepare your veggies.

2. PREP OVEN VEGGIES

First, chop the cabbage into bigger chunks. Drizzle with olive oil. Sprinkle salt and chili flakes. Place it in the oven. Set up a timer for 20 minutes.

Two garlic cloves add to oven for bake (latter we will add it to a sauce) no chopping needed.

Kale – clean it and move it to a bowl. Drizzle it with oil. You can add soy sauce, but it’s not necessary. Now use your hands to crunch kale and try to coat it with the oil. Add it to a oven to the cabbage.

3.Sauce

When veggies are in the oven now you can take care of the sauce.

First you can chop lemon into slices (we need two) and heat the pan. Drizzle some oil, hit it up to medium heat. When the pan is ready add two slices of lemon. After it will charcoal one side turn it to another side. It needs to soften.

Get your blender out. Into a blender dish add mustard, 3 tablespoons of olive oil, milk, pepper and lemon.

When veggies in the oven are ready, you can take garlic out and add it to a dish. Now blend all together to a smooth consistency, it needs to be creamy.

4.PREPARE EXTRAS

I did it with soba macaroon as it is super quick and easy to do. Boil it for 5 min and voila!

Chop parsley, get your seeds out. You can also add chopped tofu.

4. SERVING

On a plate, add some soba and tofu if you want to. Then add cabbage and kale. Drizzle your sauce and parsley on top of it. You can also sprinkle seeds to make it extra fancy.
